Traveling on a vegan diet is a challenge. I meal prep for my trips so that I can eat healthy on the road regardless of where I am. For this 3 day trip, I packed low carb, high fat, and high protein. It's all vegan as well! For breakfast, I have Vega Sport protein shakes and almonds. For lunch, I cooked Gardein chicken and Field Roast Sausages. I will eat those with broccoli and green beans that I sauteéd with coconut oil. I will also throw in some avocado. For snacks, I have peanut butter and Rise Vegan protein bars. I am set!
